Red Lentils cooked with tomato, onion and carrot served on spaghetti
Ingredients:
1 onion
1 clove garlic
1 large carrot
1 stalk celery
400 g tomatoe (tin, chopped)
2 tbsp tomato puree
500 g stock
60 g split red lentils
1 tsp marjoram dry (tbsp of fresh)
100 g spaghetti (whole wheat dry)
Directions:
1. Fry an onion, some garlic and a carrot chopped up small and some celery if you like.
2. Add tin of toms, tom puree (or use 2 tins and reduce), half pint veg stock , split red lentils and marjoram (tbsp of fresh).
3. Cook for around 30 mins or until reduced to a nice constancy and serve with pasta of choice...spag or linguine are best.
