Lentil & Barley Soup

Ingredients:
1 cup lentils, rinsed
1/2 cup pearl barley
6 cups vegetable stock
1 onion, chopped
2 cloves garlic, crushed
2 carrots, sliced
2 celery ribs, sliced
1/2 teaspoon oregano
1/2 teaspoon ground cumin
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
1/2-1 teaspoon salt
Directions:
1. Place all ingredients except salt into a large pot and bring to a simmer.
2. Cover and cook, stirring occasionally until lentils are tender, about one hour.
3. Add salt.
