Lemony Bulgur Pilaf

A no-cook grain that's a nutritional powerhouse ... great alternative to rice on those busy nights. Great side dish for grilled chicken or seafood. Add beans (cannelini or garbanzo), or tuna, and maybe some greens (garden-fresh arugula) for a healthy, easy and yummy salad! Read more !
Ingredients:
3/4 cup bulgur wheat
lemon zest (from about half of a lemon)
kosher salt - sprinkle
freshly ground pepper to taste
fresh herbs in season
3/4 cup boiling water
toasted slivered almonds (about 1t)
1t or so chopped fresh chives (when in season)
Directions:
1. Put bulgur in glass bowl
2. Zest half a lemon over it
3. Sprinkle with S & P
4. If using hearty fresh herbs, add now (rosemary, lemon thyme, thyme, or a combo - all work great)
5. Pour boiling water over it
6. Cover tightly with plastic wrap
7. Let stand 20 to 30 minutes (if still too wet, give it a boost in the microwave on high for about 1 min.)
8. Fluff with fork
9. Mix in chives, almonds, and fresh tender herbs (like basil or Italian parsley)
10. Squirt some lemon juice in to taste
