Lemon Zucchini Cake With Lemon Cream Cheese Frosti...

Super quick, super easy and super yummy! ...And cheap too! Note: there is no added liquid in this cake. The zucchini adds the moisture.
Ingredients:
cake
1 box lemon cake mix
4 eggs; slightly beaten
2 c. zucchini; peeled & grated
4oz. pkg. instant lemon pudding
1t. grated lemon zest
frosting
3t. butter; room temp.
3oz. pkg. cream cheese; softened
1 1/2c. powdered sugar
1t. grated lemon zest
1t. fresh lemon juice
Directions:
1. Mix all cake ingredients on low speed for 3 minutes.
2. Pour into prepared 9x13 baking pan.
3. Bake 325F for 40 minutes.
4. Remove cake from oven & let cool completely.
5. Meanwhile, prepare frosting.
6. Cream together butter & cream cheese.
7. Add powdered sugar & mix well.
8. Add lemon juice & zest and mix to combine.
9. Frost cooled cake and garnish with lemon if desired.
