Ingredients:
1 (2-inch) piece peeled fresh ginger
2 tablespoons fresh lemon juice
1 tablespoon vegetable oil
1/2 teaspoon fine sea salt
8 ounces firm silken tofu, drained
Directions:
1. Finely grate ginger; place ginger on several layers of damp cheesecloth. Gather edges of cheesecloth together; squeeze over a small bowl to extract 1 teaspoon ginger juice.
2. Combine ginger juice, lemon juice, oil, salt, and tofu in a food processor; process until smooth.
