Lemon Thyme Pork

Ingredients:
600 g pork fillets, halved
8 slices pancetta
4 sprigs lemon thyme
4 garlic cloves
250 g cherry tomatoes
1 -2 tablespoon olive oil
olive oil, for brushing
sea salt
cracked pepper
kitchen string
Directions:
1. Preheat oven to 200C (390F).
2. Rub pork with salt and pepper, brush with oil, top with pancetta and thyme and secure with kitchen string.
3. Add oil to a baking dish and toss tomatoes and garlic. Add the pork and roast in the oven for 20 minutes or until cooked through.
