A great lemon tart. I don't like meringue, so this recipe suits me well. This is so easy and cheap to make.
Ingredients:
1 packet marie biscuits or graham crackers
65 g butter, melted
3 eggs, seperated
1 can condensed milk
1/2 cup + 2 tbsp freshly squeezed lemon juice (150 ml)
1 cup cream (250 ml)
Directions:
1. Roll the biscuits in a plastic bag with a rolling pin until very fine.
2. Mix well with the butter.
3. Press down in 2 madium greased tart baking tins
4. Place in fridge to set.
5. Beat the egg yolks well.
6. Beat in the condensed milk and lemon juice.
7. Beat the egg whites until stiff.
8. Fold into the condenced milk mixture.
9. Pour into crust.
10. Bake for 15 - 20 minutes at 350 deg F (180 deg C).
11. Beat the cream and serve with the cream.
