Lemon Sauce

Serve hot with slices of fruit pies and tarts or on ice cream. Makes about 1 cup.
Ingredients:
1 tablespoon cornstarch
6 tablespoons freshly-squeezed lemon juice (about)
3/4 cup cold water
1/4 cup sugar
1 lemon
Directions:
1. In a small bowl, add cornstarch. Mix a little lemon juice with a little water and add to cornstarch. Beat to a smooth paste.
2. In a medium saucepan, heat remaining lemon juice and water. Add sugar, stirring constantly, until dissolved. Pour onto cornstarch paste, beating well until smooth.
3. Return to saucepan over low heat, stirring constantly, until thickened and clear. Using a zester, add the peel of 1 lemon.
4. Serve hot.
