This is for all those Lemon lovers out there, recipe is one of JoAnna M. Lund's, she does low cal recipes, but you could do this with regular ingredients if your not watching your calories. Prep time does not include time for jello to set. Read more . Enjoy
Ingredients:
* 2 (4-serving) pkgs jell-o sugar-free lemon gelatin
* 2 cups boiling water
* 1 (8-ounce) can crushed pineapple, packed in fruit juice, drain and
reserve juice
* 1 cup cool whip free
* 4 marachino cherries, chopped
* 1 cup fat-free cottage cheese
Directions:
1. In a large bowl, combine dry gelatin and boiling water. Mix well to
2. dissolve gelatin. Add enough water to reserved pineapple juice to make 1 1/2 cups liquid. Add to gelatin mixture. Mix well to combine.
3. Stir in pineapple.
4. Refrigerate until partially set. Gently fold Cool Whip Free, cherries, and cottage cheese. Evenly pour into an 8-by-8-inch dish.
5. Refrigerate until firm, about 3 hours. Cut into 8 servings.
