I found this recipe years ago in a Turkey Producers' Cookbook and I have been making it ever since. It is a family favorite. Perfect for a weekday dinner as it is quick and easy to put together.
Ingredients:
1/2 cup mayonnaise
1 tablespoon lemon juice
1 lb turkey, cut into 3/4 inch strips
1 cup breadcrumbs
3 tablespoons parmesan cheese, grated
1 tablespoon rosemary, dehydrated, crumbled
2 teaspoons lemon rind, grated
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
3/4 cup cranberry sauce
1/4 cup chili sauce
Directions:
1. In small bowl, mix together mayonnaise and lemon juice; brush over turkey strips to coat. In a separate bowl, mix together breadcrumbs, parmesan and seasonings.
2. Dip turkey strips into crumbs to coat. Place on a lightly greased cookie sheet.
3. Bake at 375 degrees Fahrenheit 4 to 6 minutes each side, until no longer pink, depending on oven.
4. Serve with warm dipping sauce.
5. Dipping sauce: In small saucepan, over medium-low heat, mix together cranberry sauce and chili sauce; heat until hot.
