Lemon Risotto

From 1001 Low Fat Recipes. Serves 4 - I would serve this with a green salad and grilled shrimp.
Ingredients:
1/4 cup minced onion
1 lemon, zest of
2 tablespoons olive oil
1 1/2 cups arborio rice
1 -1 1/2 cup chicken broth
2 -4 tablespoons lemon juice
1/2 cup grated parmesan cheese
salt and pepper
Directions:
1. Sauté onion and lemon zest in oil in large saucepan until onion is tender, 3-4 minutes.
2. Add rice; cook over medium heat, stirring constantly, 1-2 minutes.
3. Heat chicken broth to juice boiling in large saucepan; reduce heat and keep hot.
4. Add broth to rice, 1/2 cup at a time, stirring constantly until broth is absorbed before adding the next 1/2 cup.
5. Continue until the rice is al dente and creamy in texture, 20-25 minutes.
6. Stir in lemon juice and cheese; season to taste with salt and pepper.
