Ingredients:
1 pound(s) pasta - rigatoni
2 tablespoon(s) butter cut into pieces
1 cup(s) ricotta cheese
1 lemon zest and juice
3/4 teaspoon(s) salt
1/4 teaspoon(s) black pepper
Directions:
1. Cook the pasta according to the package directions.
2. Reserve ⅓ cup of the water, drain the pasta, then return it to the pot.
3. In a medium bowl, whisk together the butter, ricotta, and reserved pasta water until a creamy sauce forms.
4. Pour the sauce over the hot pasta. Add the herbs, lemon juice/zest, salt, and pepper.
5. Toss and enjoy!
6. **Note, this pasta also works well when paired with grilled chicken, shrimp, or scallops
