Lemon Red Wine Vinaigrette

Great light, tangy salad dressing for field or Boston salad
Ingredients:
3 parts red wine vinegar
1 part olive or vegetable oil
3-4 tbs sugar
1-2 tsp red pepper flakes
1 tsp oregano
1 dash freshly ground pepper
1 lemon
Directions:
1. Dissolve sugar in vinegar; may want to stir with a spoon
2. Add red pepper flakes, oregano and pepper
3. Finely grate or zest half of lemon in dressing;save other half of zest directly on salad
4. Add oil
5. Wisk dressing until creamy in texture
6. Pour all over salad and toss
