Lemon Poppyseed Pancakes

Super yummy for breakfast (or any time, really!).
Ingredients:
1/2 cup pancake mix
1/4 cup water
2 tablespoons water
1 teaspoon poppy seed
1/2 teaspoon vanilla
1/2 lemon, juice of
1/4 cup ricotta cheese
Directions:
1. Whisk together all ingredients (do try to be precise with the water; these pancakes very easily end up too watery or too dry).
2. Drop evenly onto an 8 skillet at medium heat. Flip when bubbles appear, then cook to golden brown.
