LEMON PINEAPPLE MOLD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Thompson Estate in Rockwall, Texas in 1995.
Ingredients:
1 envelope lemon gelatin
1 envelope lime gelatin
1 cup buttermilk
1 cup cottage cheese
1-1/2 cups boiling water
1-1/2 cups crushed pineapple
Directions:
1. Dissolve gelatin in boiling water then mix cheese and buttermilk in blender until smooth.
2. Pour into gelatin mixture then add crushed pineapple and let set in refrigerator until firm.
