Lemon-pineapple-carrot Gelatin Salad

I haven't seen too many gelatin salads here on GR, and rarely make them, but thought that this would be a refreshing and fruity accompaniment to BBQ ribs, potato salad & sweet corn... Was in a hurry to get it made, so placed the bowl with the dissolved Jello into a larger bowl filled with ice and set the whole thing in the refrigerator. Read more . It was ready to add the carrot and pineapple in no time!
Ingredients:
1 box (3 oz) lemon jello
1 cup boiling water
3/4 cup pineapple juice
1/4 cup orange juice
2 tsps lemon juice
1 (20 oz) can crushed pineapple, drained well
1 cup grated carrot
Directions:
1. Dissolve Jello in boiling water, add cold fruit juices.
2. Add crushed pineapple and grated carrot to the Jello when slightly thick. (Place the bowl in another bowl filled with ice cubes to quicken the process.)
3. Transfer to mold or serving bowl and chill at least 4 hours or overnight before serving.
