Ingredients:
2 teaspoons grated lemon rind
1 teaspoon fresh lemon juice
1/2 teaspoon dijon mustard
1/2 teaspoon salt
2 tablespoons extra-virgin olive oil
6 cups angel hair slaw or thinly sliced cabbage
1 cup chopped fresh flat-leaf parsley
Directions:
1. Whisk together first 4 ingredients in a large bowl; gradually whisk in olive oil. Add slaw and parsley, tossing gently to coat. Serve immediately.
