If you like lemon, you'll love this, my thinking is crushed pineapple might also be good in this, I've done other desserts like this and added pineapple to the lemon and it makes it taste like pieces of lemon. Enjoy! Read more !
Ingredients:
* 1 1/2 cups chilled whipping cream
* 1 1/4 cups purchased lemon curd or lemon pie filling
* 2 1/2 tablespoons fresh lemon juice
* 2 tablespoons grated lemon peel
* 3 1/2 cups fresh raspberries, 3 ( 1/2 pint baskets)
Directions:
1. WITH ELECTRIC MIXER, BEAT CREAM IN A LARGE BOWL UNTIL STIFF PEAKS FORM.
2. MIX LEMON CURD OR LEMON PIE FILLING, LEMON JUICE AND LEMON PEEL IN ANOTHER LARGE BOWL TO BLEND. FOLD IN WHIPPING CREAM AND 2 1/2 CUPS RASPBERRIES. (I would make layers of filling and some raspberries)
3. DIVIDE LEMON MIXTURE AMONG 6 ( 8 TO 10 OZ ) PARFAIT OR DESSERT CUPS. COVER AND CHILL UNTIL PARFAITS ARE COLD AND SET, 30 MINUTES OR OVERNIGHT.
4. SPRINKLE WITH REMAINING 1 CUP RASPBERRIES ON TOP AND SERVE IMMEDIATELY.
