a hearty low calorie muffin
Ingredients:
1 cups flour, all purpose
1/2 cup whole wheat flour
1/2 cup oatmeal
3/4 cup splenda
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 eggs
8 oz lemon yogurt
1/4 cup applesauce
1 tablespoon lemon rind
Directions:
1. 1. Mix flour,sugar,splenda, baking powder, baking soda, and salt together.
2. 2. In a seperate bowl mix eggs, yogurt, sour cream, applesauce and lemon rind together.
3. 3. Pour egg mixture over dry ingredients and mix together until just blended. DO NOT OVER MIX!!!!
4. 4. Spoon into 18 muffin cup that have either beeen sprayed or have liners.
5. 5. Bake at 400 for 15 minutes or until done.
