Lemon Mint Vinaigrette

Ingredients:
1/2 cup extra virgin olive oil
1 large clove garlic, sliced
2 tablespoons freshly squeezed lemon juice, from about 1/2 lemon
5 fresh basil leaves
1 tablespoon coarsely chopped fresh mint leaves
1 teaspoon coarsely chopped fresh mint leaves
2 teaspoons capers, drained
pepper and sea salt, to taste
Directions:
1. Place all ingredients except salt in blender. Blend on high speed for about 10 seconds, stopping once to scrape down.
2. Mixture should be completely blended. Taste for seasonings before stirring in sea salt.
3. Turn into a jar with a tight fitting lid, label, and refrigerate for up to two days. Shake to mix before using.
