mums lemon loaf. made 3 small loaf tins worth. this freezes well and i find it better out of the freezer.
Ingredients:
1 pkg lemon pudding (pie filling) mix
1 pkg lemon cake mix
4 large eggs
3/4 cup water
3/4 cup vegetable oil
lemon juice
sugar
Directions:
1. pour water and oil in large mixing bowl, beat together
2. add eggs then add cake mix and lemon pudding, beat mixture for 10 mins on low
3. pour into loaf tins
4. bake at 350 until a toothpick comes out clean, about 50 mins-1 hr
5. remove from oven and poke loafs with a fork, squeeze lemon juice all over loaves, i used probly half a lemon, then sprinkle with sugar. let cool completely and firm up a bit before removing from tins
