To use up my many lemons
Ingredients:
125 g butter
1 1/2 cups sugar
1 1/2 cups self-rising flour
1/2 cup milk
2 eggs
2 lemons
Directions:
1. Cream butter, 1 cup of sugar and rind of 2 lemons. Add eggs one at a time. Add half the flour and half the milk and stir to combine. Repeat with remaining flour and milk
2. Spoon into loaf pan and bake for 45-50min at 180 degrees. Combine remaining sugar and juice of lemons, heat for 20sec in microwave and stir to dissolve sugar. Pour over hot loaf whilst stll in pan. Allow to cool in pan.
