Lemon Lime Curd With Cream Cheese

This is good used as a parfait...or you can use it with fruit.. Just use your imagination with it..
Ingredients:
lemon lime curd
4 large eggs, at room temp
1 1/4 cups granulated sugar
1 cup butter, melted
1/2 cup fresh lemon juice
1 tablespoon grated lime zest
cream cheese
1 1/2 cups heavy cream
1 3 oz package cream cheese, softened
1/3 cup confectioners sugar
Directions:
1. In top of double boiler, whisk eggs with sugar, butter and lemon juice.
2. Over hot (not boiling) water, cook mixture, whisking constantly, 15 minutes or until mixture coats the back of a spoon and mounds slightly.
3. Pour through sieve placed over bowl; whisk in lime zest.
4. Cover with plastic wrap and refrigerate.
5. Cream Cheese:
6. In small bowl with spatula, gradually blend heavy cream into cream cheese; blend in confectioners sugar.
7. Regrigerate.
8. Now either use this as a parfait and layer with any type of fruit.
9. or just curd and cream cheese together.
10. Use your imagination.
