Lemon Lime Cake

The potato flour makes this cake dense but incredibly moist .
Ingredients:
6 egg whites and yolk .
1 1/4 c caster sugar
2 tbsp lemon rind
2 tbsp lime rind
1/4 c lemon and lime juice
1 c potato flour , sifted
filling
1 /4 c cream , whipped
topping
1 lemon and 2 lime , slice thin and pat it dry with a towel .
coat with caster sugar .
Directions:
1. Pre heat oven at 180 deg C .
2. Grease a 23 cm pan .
3. Beat and set aside the egg whites .
4. Beat the yolks and sugar until creamy and thick .
5. Add the rind and juice and beat until well combined .
6. Add the flour and the whites .
7. Mix until combined .
8. Bake for 1 hour and until firm to touch .
9. Cool it .
10. Cut into 2 .
11. Spread the whipcream .
12. Arrange the Lemon-Lime slices on top .
