Lemon Herbed Rice

Ingredients:
1 cup rice
1 teaspoon lemon zest
1/2 teaspoon salt
2 tablespoons chopped parsley
1 tablespoon minced fresh chives
Directions:
1. In a medium saucepan, bring 2 1/3 cups water to a boil. Stir in rice, lemon zest and salt.
2. Cover, reduce heat to low, and cook for 18 minutes or until rice is tender.
3. Let stand, covered for 5 minutes.
4. Fluff with a fork. Add herbs and toss lightly to mix.
