Lemon-Herb Cubed Steaks

Ingredients:
1 cup fine, dry breadcrumbs
1/4 cup grated parmesan cheese
1/2 teaspoon dried italian seasoning
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
3 egg whites, lightly beaten
1 teaspoon grated lemon rind
2 tablespoons fresh lemon juice
4 (4-ounce) cubed beef steaks
olive oil-flavored vegetable cooking spray
Directions:
1. Combine first 5 ingredients. Combine egg whites, rind, and juice. Dip steaks into egg white mixture; dredge in breadcrumb mixture. Coat a nonstick skillet with cooking spray; place over medium heat. Add steaks; cook 8 minutes on each side or until tender.
