Lemon Herb Crusted Salmon Fillet

Ingredients:
4 6- ounce(s) salmon fillets
1/4 cup(s) olive oil
8 tablespoon(s) lemon-herb seasoning blend
1 pound(s) mesclun greens or assorted lettuce
basic vinaigrette dressing
Directions:
1. Heat oven to 425 degrees. Brush tops and bottoms of fillets with olive oil and place in a glass baking dish. Thoroughly coat each fillet with 2 tablespoons of lemon-herb seasoning, adding more if desired so there is a thick crust.
2. Bake about 10 minutes, or until salmon reaches desired doneness.
3. Lightly dress salad greens with as much vinaigrette as desired. Serve salmon over the salad.
