These are superb. I got this recipe over 30 years ago from a next door neighbor who was like a second mom. She taught me how to bake a lot of things and this was one of those specialities that always ends up made in triple batches and devoured. Read more . These are going on my cookie trays this year. Ingredients:
2 cups butter
1-1/2 cups light brown sugar
2 teaspoons grated lemon rind
5 cups flour
1/2 teaspoon lemon juice
2 egg whites beaten with 2 tablespoons water
2 cups hazelnuts finely chopped
Directions:
1. Preheat oven to 400.
2. Cream together butter, brown sugar and lemon rind until fluffy.
3. Sift flour and salt together then add to butter mixture.
4. Add lemon juice and mix well then chill several hours.
5. Shape into fingers about 1-1/2 long and 1/2 in diameter.
6. Roll in egg white beaten with water then roll in chopped nuts and bake 12 minutes.
