Lemon Grass Prawn Toast

This prawn toast has flavours of lemon grass, cilantros, chilli and lemons.
Ingredients:
1 lb of peeled, raw prawns
4 springs of onions, chopped
1 stalk of lemon grass, cleaned and crushed
1 egg
1 tbsp vegetable oil
1 tbsp of fresh chopped cilantros
1 tbsp fish sauce
2 tsp of sweet thai chilli sauce
1 tsp of lemon juice
1 tbsp cornstarch
8 slices of stale bread, cut into quarters and then diagonally into triangles
oil for shallow frying
Directions:
1. Add prawns, onions, lemongrass, egg, oil, cilantros, fish and chilli sauces, lemon juice and cornstarch to a food processor and process until paste is smooth.
2. Spread prawn toast on each triangle.
3. Heat 2 cm of oil in a pan. When oil is hot, boils when you place a wooden chopstick in, add prawn toast face down in oil.
4. Cook for 2 minutes and turn once. Cook until golden and drain on paper towel.
5. Enjoy!
