Lemon Filled Cake With Coconut Frosting

This is three layers of yumminess! moist white cake, lemon curd filling and creamy,fluffy frosting sprinkled with coconut..My hubby requests this for every birthday. It does take a bit of work but is well worth it! Read more !
Ingredients:
white cake
3 c flour
1 c crisco
1 tsp vanilla
1 tsp salt
2 c sugar
1 1/2 c milk
3 tsp baking powder
5 egg whites beaten stiff
filling
1/2 c sugar
1/8 tsp salt
1/2 c water
1 tbsp butter
2 tbsp cornstarch
1/3 c lemon juice
2 tsp lemon zest
1 egg, slightly beaten
coconut frosting
1 1/2 c sugar
2 egg whites
1/4 tsp salt
1 can coconut
1/3 c water
1/4 tsp cream of tarter
1 tsp vanilla
Directions:
1. Cake
2. Combine all ingredients except egg whites in large bowl and mix with electric mixer on medium speed 3 minutes until well mixed
3. Gently fold in egg whites until thoroughly blended
4. Pour into 3 greased and floured 9 in cake pans
5. Bake at 350F for approximately 25 minutes
6. Cool in pan on wire rack for 5 minutes then turn out of pans and cool thoroughly
7. Filling
8. Combine sugar cornstarch and salt in top of double boiler
9. Add lemon juice, zest, water egg and butter, mix well
10. Place over rapidly boiling water and cook, stirring constantly until mixture thickens (about 5 minutes)
11. Cool thoroughly in refrigerator
12. Frosting
13. Combine sugar, water, egg whites, cream of tarter and salt in top of double boiler .
14. Beat with portable electric mixer until blended
15. Place over rapidly boiling water.
16. Beat constantly with mixer 7-10 minutes until frosting holds a peak
17. Remove from heat, add vanilla and continue beating until frosting is cool and of spreading consistency
18. Spread over top and sides of cake and sprinkle with coconut
19. Note
20. Put a layer of lemon curd then a thin layer of frosting and lightly sprinkle with coconut between layers
21. You may need to insert thin wooden skewers between layers, this is a tall cake
