excellent little melt in your mouth cookies, fit for any occasion!
Ingredients:
1/2 cup butter, softened
3/4 cup sugar
1 egg
1 tablespoon half-and-half
1 teaspoon fresh lemon zest
1 1/2 cups all-purpose flour
1/2 cup lemon drop candy, finely chopped
1 teaspoon baking powder
1/4 teaspoon salt
Directions:
1. preheat oven to 350 degrees.
2. in a large bowl, cream butter and sugar until light and fluffy.
3. beat in egg, half and half, and lemon peel.
4. in a seperate bowl, combine lemon drop candies, baking powder and salt.
5. gradually add to butter and egg mixture and mix well.
6. drop by round teaspoonfuls onto greased baking sheets.
7. bake for 8-10 minutes.
8. cool for 2 minutes and enjoy!
