Lemon Curd Cheesecake

Ingredients:

  • crust
  • 4 tbsp butter
  • filling
  • 3 (8 oz) package. cream cheese, softened
  • 1 cup sugar
  • 2 eggs
  • 2 tbsp flour
  • 1 tsp vanilla
  • 1/2 tsp lemon extract
  • 1 tbsp lemon zest
  • topping

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease 9 springform pan.
  3. Stir together crust ingredients and press into pan.
  4. Bake for 5-7 minutes.
  5. Beat cream cheese and sugar until smooth, 2-3 minutes.
  6. Add remaining ingredients except lemon curd, beat until smooth.
  7. Pour into pan.
  8. Wrap bottom of pan with foil.
  9. Place pan into baking dish and pour hot water into baking dish until half full.
  10. Bake 1 hour or until set around edges. Center should be slightly jiggly.
  11. Let cool then refridgerate for a few hours.
  12. Spread top with lemon curd.
  13. Enjoy!
