This is an old amish recipe. I have been making this for year. Recipe calls for 2-8 pies. I make it in one 10 pie.
Ingredients:
makes 2-8 pies or 1-10 pie
mix
1 1/2 cup sugar
2 lemon juiced (roll before juicing) & rind grated
add
3 eggs, beaten
slowly add
1 cup boiling water
pour this into pie shell. sprinkle on crumb topping
Directions:
1. Crumb topping: work with fingers until fine crumb.
2. 1 cup sugar
3. 1 3/4 cup flour
4. 2 teaspoons baking powder
5. 3 tablespoons butter
6. Bake 40 minutes 400 degrees until brown
7. ***I always cover the pie crust edges with foil and bake with the foil on for most of the time until last 15 minutes. Sometimes it stays on the entire time. I always use foil on my crusts.
