Ingredients:

  • 3/4- cup of shortening
  • 1- cup of sugar
  • 3- large eggs
  • 2 - cups of all-purpose flour
  • 3/4 - tsp of baking soda
  • 1/8- tsp of salt
  • 2 - (3.4-oz) packages of lemon instant pudding mix

Directions:

  1. Beat Shortening at medium speed with an electric mixer until creamy.
  2. Gradually add sugar, beating well. Add eggs one at a time, beating well after each addition.
  3. Combine flour and the remaining 3 ingredients
  4. Gradually add to shortening mixture, beating well
  5. Drop dough by rounded teaspoonfuls onto lightly greased baking sheets.
  6. Bake at 375 F. for 8 to 9 minutes or until cookies are lightly browned. Cool one minute on baking sheets;
  7. Remove to wire racks to cool completely.
