Got this recipe from a internet friend who loves to cook much as I do. She shared this VERY simple, easy, melt-in-your-mouth cookies.. Excellent use for holidays.
Ingredients:
1 box lemon cake mix (with pudding in mix)
1 large egg
2 1/4 cups of cool-whip
confectioners sugar (to roll 'balls' in)
Directions:
1. Preheat oven to 350.
2. In a large bowl empty contents of cake mix box.
3. Beat egg slightly then add to mix in bowl.
4. Add Cool-Whip.
5. Mix together until well blended.
6. (The dough mixture will be very sticky.)
7. Using 2 teaspoons, scoop a slightly rounded teaspoon of dough, then use second teaspoon to slip the dough off into powdered sugar.
8. Completely cover dough with powdered sugar and then place on baking sheet about 2 apart.
9. Bake for 10-12 minutes.
10. Cookie should be firm and have a 'dry' appearance in the 'cracks' on top.
11. If not, continue baking and check at 1 minute intervals.
12. When done, remove from oven and allow cookies to cool on baking sheet for 5 minutes. Remove to wire rack to finish cooling.
13. (If underbaked, cookies will be very flat and chewy.)
14. For a fun holiday cookie use a Red Velvet cake mix with the addition of a few drops of peppermint flavoring.
15. Try this recipe with chocolate fudge or a strawberry cake mix.
16. If you like spice cookies use a spice cake mix with the vanilla flavored Cool-Whip.
17. A white cake mix with the addition of a couple drops of almond flavoring make an elegant special occasion cookie.
