This sweetly piquant confection couldn't be easier to make. Simply blend a few ingredients into a fluffy pastel cloud and sprinkle with fresh blueberries!
Ingredients:
1 (8-ounce) package cream cheese, softened
1 (21-ounce) can comstock or wilderness lemon pie filling
1 cup sour cream
1 teaspoon vanilla extract
1/2 pint fresh blueberries
Directions:
1. In large bowl of electric mixer, beat cream cheese until fluffy. Add pie filling, sour cream and vanilla.
2. Beat until light and fluffy.
3. Place mixture in piping bag or plastic storage bag, snip corner of bag. Pipe cream into serving bowls.
4. Refrigerate until ready to serve or at least for one hour!
5. Garnish with fresh blueberries.
6. *I add a very thin slice of lemon sprinkled with sugar and some shaved white chocolate.
7. *Try this with a coconut pie filling, sprinkled with toasted coconut..Its wonderful!
