Lemon Creamed Rice

Use orange rind instead of lemon, then garnish with a slice of orange. Stir frequently to prevent the rice sticking to the bottom of the saucepan - and if you have a heavy copper-base pan, use that one!
Ingredients:
1/2 cup medium grain white rice
600 ml milk
1/2 cup cream
1/3 cup sugar
1 lemon, zest of, grated
Directions:
1. Place the rice into a saucepan with the milk and lemon zest. Bring to the boil, reduce heat then simmer, covered, for 30 minutes or until the rice is tender and all the milk has been absorbed.
2. Stir frequently to prevent the rice sticking to the base of the saucepan.
3. Remove from heat, stir in the cream and sugar and serve with a spoonful of ice cream. Garnish with a slice of lemon and a fresh mint leaf.
4. Other forms of sweetener can be used instead of sugar if prefer.
