Lemon Creamcheese Cupcakes

Regular cheesecake takes so long to make and you need special baking dishes and water, blah blah blah.. This is done in half the time and is absolutely delicious!! Enjoy!
Ingredients:
12 vanilla wafers
2 eggs
2 tsp vanilla extract
1 c sugar
2 (8oz) packages of philadelphia cream cheese
lemon zest from one lemon
homemade blueberry topping (optional)
Directions:
1. Preheat oven to 350 degrees F
2. Use cupcake liners and line 12 cupcake tins
3. Put a Vanilla Wafer, flat side down, in each one and set aside
4. In medium bowl, put both packages of Cream Cheese (make sure it's room temp and soft) and beat with hand mixer until creamy
5. Add Vanilla and Sugar, blend with mixer
6. Add one Egg, blend well
7. Add second Egg and blend well
8. Zest one Lemon, about 2 tbsp, and stir into cream cheese mixture
9. Put 1/4 c mixture in each cupcake tin, over cookie
10. (If using blueberry topping, spoon on top of cream cheese)
11. Bake in the oven for 40 minutes or until top is golden brown
12. Remove and let them cool completely
13. Serve and Enjoy!
