Lemon Cream Cookies

This started from a classic recipe from my late mother-in-law. Easy to make. My family loves them!
Ingredients:
3 1/4 cups sifted all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/2 cup margarine (i use parkay)
1 egg
1/2 cup sour cream
1 teaspoon vanilla
2 lemons, zest of
1/4 cup butter
1/4 cup milk
powdered sugar (sifted)
1/4 teaspoon vanilla
2 teaspoons lemon juice
Directions:
1. Sift dry ingredients together (except sugar). Set aside. Cream sugar and butter together. Add egg, sour cream, vanilla and lemon zest. Mix until glossy. Add dry ingredients. Mix.
2. At this point I wrap dough in plastic wrap and refrigerate for at least 30 minute.
3. Roll and cut out cookies.
4. Bake at 350 for 10-12 minute Don't brown!
5. While baking make icing.
6. Melt butter in sauce pan. Add milk. Heat until just boiling. Remove from heat. Add powdered sugar until correct consistency. Whisk together. Add vanilla and lemon juice. Stir.
7. Spread on warm cookies.
8. Let cool. Enjoy.
