A friend of mine brought this into work one day. It was a nice surprise to find coconut in this wonderful lemon dessert.
Ingredients:
cake
20 soda crackers (2 inch squares)
3/4 cup brown sugar
1 cup flour
1 tsp baking soda
1/2 cup butter
1 cup shredded sweet coconut
lemon filling
1 cup sugar
2 tbsp cornstarch
1 cup cold water
2 eggs, beaten
juice from 2 large lemons
1/4 cup butter
1 tsp vanilla extract
Directions:
1. Crush crackers in a bowl. Add brown sugar, flour and soda. Work in butter and then add coconut. Pat 3/4 of this mixture into a greased and floured 8 or 9 inch baking pan.
2. Carefully spread on the lemon filling.
3. Cover with the rest of the crumb mixture.
4. Bake at 350 for 30 to 35 minutes or until lightly brown.
5. Lemon Filling Preparation:
6. In a saucepan, combine sugar and cornstarch. Gradually stir in water. Add remaining ingredients. Cook over medium heat until thickened. Cool before adding to cake.
