Ingredients:
1/2 tsp salt
2 tbsp cornstarch
1 cup sugar
2 eggs, beaten
3/4 cup margarine
1/2 tsp vanilla extract
1/2 cup lemon juice
3/4 cup crushed saltine crackers
1 cup packed brown sugar
1 cup flour (doesn't say which kind)
1/2 tsp baking soda
1 cup shredded coconut
Directions:
1. Combine salt, cornstarch, sugar and 1 cup cold water in saucepan. Mix well. Cook over medium heat until thick, stirring constantly. Pour into top of double boiler. Cook for 10-12 minutes, stirring occasionally.
2. Stir a small amount of hot mixture into eggs. Stir eggs into hot mixture. Cook for 4-5 minutes longer. Remove from heat.
3. Stir in /14 cup margarine, vanilla and lemon juice. Cool. Mix saltine crumbs, brown sugar and /12 cup melted margarine in bowl. Add flour, soda, and coconut. Mix well.
4. Press 3/4 of the mixture into buttered 9 inch square baking pan. Pour lemon filling over top. Sprinkle with remaining crumb mixture. Bake at 350 degrees for 15-20 minutes or until lightly browned. Chill. Cut into squares.
