Mmmmm, so good.
Ingredients:
1/2 cup butter
1/2 cup sugar
1-1/2 cups flour
1 tbsp. lemon juice, freshly squeezed
1-1/2 tsp. lemon zest
1/2 cup chocolate bark
1/4 cup pecans, finely chopped
Directions:
1. Place butter, sugar, flour, lemon juice, and lemon zest in a food processor and process until dough forms.
2. Divide dough into 2 equal parts and roll into a log.
3. Wrap each log in wax paper and chill until firm.
4. Cut into one half inch pieces and place on an ungreased cookie sheet.
5. Bake for 15 minutes at 325 degrees.
6. Remove from oven and allow to cool.
7. Meanwhile melt the chocolate bark according to directions on the package.
8. It's easier to melt chocolate in a glass bowl in the microwave and stir halfway during the cooking time.
9. When the chocolate is melted, dip one end of each cookie in the chocolate and then in the chopped pecans.
10. Allow the cookies to cool on wax paper.
