Ingredients:
2 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar
1 tbs baking powder
1 tbs finely shredded lemon peel
1/2 tsp salt
1 egg, slightly beaten
1 1/4 cups milk
1 serrano chile, seeds and stem removed, minced
3/4 cup chutney, chopped
1/4 cup cooking oil
1 tbs lemon juice
1 cup chopped pecans
Directions:
1. Preheat the oven to 350 degrees. In a large mixing bowl, combine the flour, sugars, baking powder, lemon peel, and salt. In a smaller bowl, combine the egg, milk, serrano, chutney, oil, and lemon juice. Mix the egg mixture into the flour mixture, stirring well. Add the nuts, then transfer the batter to a greased 9x5x3-inch loaf pan.
2. Place the pan in the oven and bake for 1 hour or until done. Remove the pan from the oven and cool for 10 minutes. Remove the bread from the pan and cool on a rack.
