Lemon Cake Bread With Lemon Glaze

Wonderful lemon cake bread that is not too sweet, not too tart. Its light texture and the delicious glaze that is drizzled on top make it especially yummy...
Ingredients:
1 1/2 cups granulated sugar
1/4 cup finely grated fresh lemon peel/zest
1 cup cooking oil- preferably canola
6 eggs
1 2/3 cup all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
glaze
2 cups sifted confectioner's sugar
1 teaspoon vanilla extract
2 tablespoons softened butter or margarine
3 to 4 tablespoons lemon juice
1 teaspoon finely grated lemon peel/zest
Directions:
1. Preheat oven to 325 degrees.
2. Grease and lightly flour two 8 x 4-inch loaf pans.
3. In large mixing bowl, beat granulated sugar, grated lemon peel, and canola oil.
4. Beat for one minute at medium speed with electric mixer.
5. Add eggs, one at a time, beating well after each addition.
6. Stir in by hand the remaining ingredients: flour, baking powder, and salt.
7. Stir only until dry ingredients are moistened.
8. Pour batter into prepared loaf pans.
9. Bake for 50 to 60 minutes or until toothpick inserted in center comes out clean.
10. Remove from oven carefully and let cool for ten minutes.
11. Remove from pan.
12. Cool completely and place on waxed paper before glazing..
13. For Glaze:
14. In medium mixing bowl, combine confectioner's sugar, vanilla, margarine, lemon juice, and grated lemon peel.
15. Beat until mixture has a smooth consistency of a glaze.
16. Drizzle over loaves which are placed on waxed paper.
17. Makes approximately 1 1/2 cups of glaze.
