Lemon Buttermilk Pie

Ingredients:
1/2 cup butter
2/3 cup sugar
3 eggs, separated
1/2 teaspoon salt
1 teaspoon grated lemon, rind of
2 tablespoons lemon juice
3 tablespoons cornstarch
2 cups buttermilk
1 9 unbaked pie shell
Directions:
1. Cream the butter and sugar together.
2. Add the egg yolks one at a time, beating well.
3. Add salt, grated lemon peel, lemon juice, and cornstarch; mix well.
4. Add buttermilk.
5. Beat egg whites until stiff and fold into buttermilk mixture.
6. Pour into the unbaked pie shell and bake at 425 degrees F for 10 minutes.
7. Reduce heat to 350 degrees F and bake for 30 minutes or until the custard is set.
8. Serve warm or cooled.
