Ingredients:

  • 3 large eggs
  • 3/4 cup sugar
  • 4 tbsp lemon juice
  • 4 tbsp butter
  • 1 grated lemon , rind of
  • 1/4 tsp salt

Directions:

  1. Beat eggs till light.add sugar with lemon juice and grated lemon peel.
  2. Combine in a saucepan with butter and salt.
  3. Cook, stirring constantly until thickened, to a pudding consistency.
  4. Let cool and spread on cake.
  5. Serves 8.
