Lemon Butter

A very easy recipe handed down from my Nana. It makes a lovely fresh filling for tarts and cakes. For an extra special cake filling, gently mix together with whipped cream.
Ingredients:
3 eggs, beaten
1 cup sugar
1 tablespoon lemon rind, grated
1/2 cup lemon juice
60 g butter, chopped
Directions:
1. Combine all ingredients in a heat-proof bowl.
2. Whisk constantly over simmering water until the mixture coats the back of a metal spoon.
3. Remove from the heat and pour into warm, sterilized jars.
4. When cool, store in the refrigerator till required.
