Lemon Basmati Rice With Pine Nuts

Ingredients:
1 teaspoon canola oil
1 cup chopped onion
1 cup chopped celery
3 cups fat-free, less-sodium chicken broth
1 1/2 cups uncooked brown basmati rice
1/4 cup currants
1/4 cup pine nuts, toasted
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon fresh lemon juice
Directions:
1. Heat oil in a large saucepan over mediumhigh heat. Add onion and celery; sauté 5 minutes or until tender. Add broth, rice, and currants; bring to a boil. Cover, reduce heat, and simmer 55 minutes or until rice is tender and liquid is absorbed. Stir in pine nuts, salt, pepper, and lemon juice.
