Lemon Basil Potato Salad

A unique potato salad that is great any time!
Ingredients:
2.5 lb small yukon god potatoes, or red new potatoes, cut into wedges
vegetable cooking spray
1/4 c fresh squeezed lemon juice
4 garlic cloves, minced
1 (1 oz) pkg fresh baskil, chopped, about 1/3 c
1 t dijon mustard
1 t salt
1/2 t freshly ground black pepper
2/3 c olive oil
1/2 med red onion, sliced
1 (10 oz) pkg fresh spinach
8 thick cut peppered bacon slices, cooked and crmbled
Directions:
1. Arrange potato wedges in an even layer in a lightly greased broiler pan
2. Coat wedges with cooking spray
3. Bake at 475 20-25 minutes, or until tender and golden
4. Whisk together lemon juice, and next 5 ingredients; whisk in oil in a slow, steady stream
5. Gently toss potatoes, onion, and 1/2 c lemon juice mixture
6. Arrange spinach evenly on serving platter or in individual bowls
7. Drizzle with remaining lemon juic mixture
8. Top with potato mixture
9. Sprinkle with bacon
