Without the addition of regular flour, these lemon bars are really delicious! I converted my favorite recipe for Lemon Bars, using a good wheat-free baking flour and came up with the recipe below. These bars have a well-balanced flavor of sweet and sour that will just melt in your mouth. Read more . They are also very easy to prepare and I hope you'll enjoy them. You can easily substitute the lemon juice for Key Lime juice and make Key Lime bars.
Ingredients:
1 cup of butter at room temperature (2 sticks)
2 cups of bob's red mills gluten-free all purpose flour
4 lightly beaten eggs
2 cups granulated sugar
1/2 cup powdered sugar
3 tb cornstarch
1/4 cup fresh lemon juice (or key lime juice)
1 tb. fresh lemon zest (add a bit more for more tartness if you wish)
1/4-1/2 powdered sugar to sprinkle on top of baked bars
Directions:
1. Preheat oven to 350 degrees
2. Prepare a 13x9 inch pan by covering with Release Aluminum foil
3. Mix the gluten-free flour with the butter.
4. Add 1/2 of powdered sugar and blend well with a fork.
5. Press this mixture into the bottom of your pan, covering well. (Dip your hands into the powdered sugar so batter won't stick to your hands.)
6. Bake for 20 minutes or until a LIGHT golden brown color. (Check after 10 minutes to see if there are any large bubbles. Using a fork, push the bubbles down by lightly piercing the dough.)
7. Remove from oven and set aside and prepare filling.
8. Place the eggs, granulated sugar and the cornstarch in a bowl and mix with a whip until well-blended.
9. Make sure that there are no lumps from the cornstarch.
10. Add the lemon juice and lemon zest and stir into batter.
11. Pour this directly over the crust in the pan and return to oven.
12. Bake for 15 minutes and check the top of the lemon bars.
13. If the top is white and dry, remove from oven.
14. Let cool for 15 minutes and sprinkle with powdered sugar.
15. Cut into bars/squares and serve.
